Người H’re dành những thửa ruộng nhỏ trồng giống nếp “sọc sạc” để làm cốm, gói bánh tét, nấu rượu… Tháng 3 âm lịch, khi những ruộng lúa bậc thang ngả vàng là lúc đồng bào H’re ở huyện Ba Tơ vào mùa cốm mới.
Ngoài các giống lúa thường để nấu cơm, người H’re còn dành những thửa ruộng nhỏ để trồng giống nếp “sọc sạc” để làm cốm, làm bánh tét… Nếp “sọc sạc” là giống nếp thuần chủng, hạt tròn, vừa dẻo, vừa thơm được người H’re gìn giữ qua nhiều đời. Một năm cấy hai mùa nếp.Bà Phạm Thị Thung (80 tuổi), ở làng Teng, xã Ba Thành, huyện Ba Tơ mang gùi ra đồng gặt nếp mang về làm cốm.Hạt nếp về làm cốm phải còn chút sữa ở đầu hạt và hạt chưa chín hết, không phơi khô, chưa bóc vỏ. Như vậy mới làm được hạt cốm vừa dẻo vừa thơm.Nếp gặt mang về bà Thung dùng chân đạp cho hạt nếp rơi ra.Phạm Thị Y Hòa, cháu ngoại bà Thung cũng tham gia phụ bà làm cốm.
Những hạt còn dính trong cậy bà dùng chén để tuốt…… rồi sảy để loại bỏ hạt lép.Cho hạt nếp vào nồi rang…… cho đến khi vỏ nếp bung ra.Cho nếp đã rang vào cối giã.Công đoạn cuối cùng sàng lại để tách hẳn vỏ trấu và hạt nếp thành cốm.Món cốm với hương vị độc đáo, mùi thơm dịu dịu, nhờ hấp thụ tinh hoa của núi rừng là món ăn vặt ưa thích của người H’re.Món cốm rang.Món cốm bọc chả.Qua bàn tay khéo léo của Hòa, ngoài cốm rang, bột cốm, cốm chiên giòn còn chế biến món cốm chả. Những hạt cốm dẻo, thơm đã thực sự tạo nên một món ăn hấp dẫn, tạo thêm sự phong phú cho chuỗi du lịch cộng đồng tại Làng Teng.
